Creamy White Chili

We are trying to eat more meatless meals at our house in an effort to eat healthier and save money. This is a recipe from a friend of mine that I altered a bit to make more Weight Watchers friendly. You can also add chicken to it. We are having it for dinner tonight and it smells heavenly.

Creamy White Chili

1 med. onion, chopped
1 Tbs extra virgin olive oil
2-15 oz cans of great northern beans, rinsed and drained
2 tsp garlic, minced
2 c chicken or veg broth
1-4 oz can chopped green chiles
1 tsp salt
1 tsp cumin
1 tsp oregano
1/4 tsp pepper
1 c light sour cream
1/3 c fat free half & half
Monterrey Jack cheese and tortilla chips for serving (I omitted these for my serving)

Saying this makes 4 servings puts it at 8 Weight Watchers Points Plus Value. Having not made it before, I am not sure the size of the servings.

This is just like white chicken chili, but with no chicken. In stock pot, saute onion in oil until translucent. Add garlic and saute until fragrant. Add beans, broth, chiles and seasonings. Bring to a boil; reduce heat; simmer uncovered 30 min. Remove from heat; stir in sour cream and whipping cream. Serve topped with cheese and handful of crushed chips.
